Makes 6 oz herbed cheese.

Here’s a nice combination of flavors. I originally made this to stuff squash blossoms, but it would go well just spread on toast or crackers. I also like to place a marble sized ball of this cheese on a large leaf of basil and serve as an hors d’oeuvre.
1 tablespoon olive oil
2 shallots, peeled and minced
1 tablespoon fresh minced garlic
1 tablespoon chopped fresh tarragon
1 tablespoon fresh thyme leaves
1 tablespoon chopped fresh basil
1 tablespoon snipped fresh chives
6 ounces plain goat cheese
Salt and freshly ground pepper, to taste
