NORTHWEST COOKS

GOING OUTSIDE TO PLAY

. . . what better place then the Northwest to hike and bike your little tooshi off.

Well, I’ve posted the herbed chevre recipe. See link below.

Ah cheese. I love cheese. However, I’ve been told to cut back on that stuff and I have - really. I’ve also been told to up my aerobic activity, and I have - really - no really.  Luckily it’s summer and what better place then the Northwest to hike and bike your little tooshi off.

Biking in the Skagit Valley is particularly wonderful this time of year. You can see what’s being harvested and what’s being planted. The past two days I biked the southern end of the valley. I passed fields of golden wheat, potatoes, corn, and raspberries. The picking crews were out in force harvesting big fat blueberries.  Little birds were out in force harvesting berries as well and the hawks were out in force eating the little birds. I saw my first midair “kill” yesterday. The hawk’s skill was amazing. First a hit, then a swoop to snag the falling victim. Life’s rough when you’re low on the food chain.

On my ride Monday, I made a quick stop at Hedlin Farms and picked up something I had never seen before. They are little green round eggplants called “Kermit” or “Thai” eggplants. I cut them in half and grilled them with an assortment of baby squash I bought at the Anacortes Farmers Market. The girl who sold them to me said that they are fun to use as part of a shish kabob. I might give it a try. They are just the right size.
